The pictures I am using here are for 4 burritos that I made to eat that morning, but the recipe I am providing you with is enough for 8 burritos that can be individually wrapped, frozen, and reheated when you need them! Here is how I do mine:
Ingredients:
- 8 whole grain/multi-grain tortilla shells
- 8 eggs, scrambled
- 2 pounds lean ground turkey breast
- 2 tbsp ground fennel seeds
- 2 tbsp garlic powder
- 2 tbsp thyme
- 2 tbsp smoky paprika (gives it a chorizo taste), optional
- 1 cup green peppers, diced
- 1 cup red peppers, diced
- 1 cup yellow peppers, diced
- 1 cup orange peppers, diced
- 1 cup onions, diced
- 3 cups baby spinach
- 2 2/3 cup feta cheese or low fat shredded cheese
- hot sauce (optional), to taste
- 4 tbsp extra virgin olive oil or coconut oil, divided in half
Directions:
- Heat 2 tbsp of EVOO/coconut oil in a nonstick or seasoned cast iron pan. Once the oil is hot, add the ground turkey, ground fennel seeds, garlic powder, paprika, and thyme. Cook until browned. Remove from pan and set aside.
- Add the remaining oil and add the diced peppers and onions. Saute until tender crisp, about 3-4 minutes.
- Add the baby spinach and saute an additional 2-3 minutes, draining any excess liquid. This liquid will make your burrito soggy.
- Add the turkey back to the pan and stir everything together.
- Once everything is mixed well, add the scrambled eggs. Cook on medium heat, stirring occasionally until eggs are cooked.
- Remove from heat and put in a bowl to allow to cool. Once cooled, add the cheese and hot sauce.
- Divide mixture into 8 equal parts for each tortilla.
- Put one part of the mixture along the center of your first tortilla, leaving enough room at the edges to roll up.
- Roll your tortilla, making sure to tuck in the sides so that the mixture stays on the inside. Set on a sheet pan lined with wax paper. Make sure the sheet pan will fit into your freezer first!
- Repeat 7 more times and cover the tray with plastic wrap.
- Freeze for 2-3 hours until they are completely frozen. Remove from freezer and wrap each individually in plastic wrap. Store in a freezer bag.
To heat:
Remove from freezer and remove plastic wrap. Wrap lightly in a paper towel and put on a microwave safe plate. Heat 1-2 minutes, depending on your microwave. Remove paper towel, and you have a delicious, healthy breakfast you can take on the go!
CAUTION: MAY BE HOT!
